  • 2 large ripe bananas, mashed
  • 1 cup (120g) grated zucchini, squeezed to remove excess moisture
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • ⅓ cup (80ml) vegetable oil or melted coconut oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (60g) chopped walnuts, toasted
  • For the maple glaze:
  • ¾ cup (90g) powdered sugar, sifted
  • 2 tablespoons pure maple syrup
  • 1 tablespoon milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.
  2. Grate zucchini finely and squeeze out excess moisture using a clean kitchen towel.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a large bowl, mash bananas. Add granulated sugar, brown sugar, oil, eggs, and vanilla extract. Mix until combined and slightly frothy.
  5. Fold dry ingredients into wet ingredients gently; do not overmix.
  6. Fold in grated zucchini and chopped toasted walnuts until just incorporated.
  7. Pour batter into prepared loaf pan and smooth the top. Tap pan gently to release air bubbles.
  8. Bake for 55-65 minutes, checking at 55 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  9. Cool bread in pan for 10 minutes, then transfer to wire rack to cool completely.
  10. Make maple glaze by whisking powdered sugar, maple syrup, milk, and vanilla until smooth; adjust consistency as needed.
  11. Drizzle glaze over cooled bread and let set for at least 15 minutes before slicing.

Notes

Drain zucchini well to avoid sogginess. Use ripe bananas for best flavor. Toast walnuts before adding for enhanced flavor. Let bread cool completely before glazing to prevent glaze from melting. Oven temperatures vary; use an oven thermometer if possible.
