One-Pan Garlic Butter Chicken Thighs & Green Beans

A quick and easy one-pan dinner featuring crispy-skinned chicken thighs and tender green beans in a rich garlic butter sauce. Ready in under 30 minutes with minimal cleanup.

  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds total)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 12 ounces fresh green beans, trimmed
  • 1/4 teaspoon salt
  • Pinch of red pepper flakes (optional)
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, thinly sliced
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Pat the chicken thighs completely dry with paper towels. Season both sides generously with the salt, pepper, and garlic powder. Let them sit at room temperature for 10 minutes while you prep the green beans.
  2. Trim the green beans by lining up a handful and cutting off the stem ends. Set them aside near the stove.
  3. Slice the garlic cloves into thin rounds, not mince.
  4. Place your skillet over medium heat and add the olive oil. Place the thighs skin-side down in the cold skillet, then turn the heat to medium. Cook for 12-14 minutes, without moving them, until the skin is deep golden brown and releases easily from the pan.
  5. Flip the chicken thighs using your tongs. Cook for another 5-6 minutes on the second side. The internal temperature should reach 175-185°F when tested with a thermometer.
  6. Remove the chicken to a plate and tent loosely with foil. Pour off all but about 1 tablespoon of the rendered fat from the pan, leaving any browned bits behind.
  7. Reduce the heat to medium-low and add the butter to the pan. Once it melts, add the sliced garlic and cook for 30-60 seconds, stirring constantly, until fragrant.
  8. Add the green beans to the pan along with the 1/4 teaspoon salt and red pepper flakes if using. Toss to coat in the garlic butter. Cook for 4-5 minutes, stirring occasionally, until the beans are bright green and tender-crisp.
  9. Return the chicken thighs to the pan, nestling them among the green beans. Spoon some of the garlic butter over the tops of the chicken. Let everything warm through together for about 2 minutes.
  10. Sprinkle with fresh parsley if using, and serve immediately.

Notes

Start the chicken in a cold pan for extra crispy skin. Don’t skip drying the chicken. Watch the garlic carefully to avoid burning. Let the chicken rest before serving. Use a meat thermometer for best results.
