Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract (or almond extract)
  • 1/2 cup (50g) unsweetened black cocoa powder
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large egg whites (or 4 tablespoons pasteurized meringue powder mixed with water)
  • 3 cups (360g) powdered sugar, sifted
  • 1/2 teaspoon cream of tartar
  • Black gel food coloring
  • Optional: squeeze bottle or piping bags with small round tip

Instructions

  1. In a large bowl, cream 1 cup softened unsalted butter and 1 cup sugar on medium speed for 3-4 minutes until light and fluffy.
  2. Beat in 1 large egg and 1 teaspoon vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1/2 cup black cocoa powder, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  4. Gradually add dry ingredients to wet mixture on low speed until combined; dough will be thick but soft and slightly crumbly.
  5. Divide dough in half, flatten into discs, wrap in plastic wrap, and chill for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Roll out one disc on lightly floured surface to 1/4-inch thickness.
  7. Use an 8-inch round cookie cutter to cut circles and place on lined baking sheets about 1 inch apart.
  8. Chill cut cookies in fridge for 10 minutes before baking.
  9. Bake for 10-12 minutes until set but not browned; edges firm and center set. Cool completely on wire racks.
  10. Prepare royal icing by beating 2 egg whites with 3 cups powdered sugar and 1/2 teaspoon cream of tartar until stiff peaks form (5-7 minutes).
  11. Divide icing into two bowls; leave one white and color the other black with gel food coloring.
  12. Spread a thin layer of white royal icing over each cookie as base; let dry until firm but tacky (15-20 minutes).
  13. Pipe concentric circles with black icing on top of white base; drag a toothpick from center outward to create spider web effect.
  14. Allow decorated cookies to dry completely for at least 3 hours or overnight before storing or stacking.

Notes

Use black cocoa powder for the best dark color; chilling dough and cut cookies prevents spreading and keeps shapes crisp. Practice piping on parchment before decorating. Let icing dry overnight for best texture. For gluten-free, substitute flour with gluten-free blend; for dairy-free, use plant-based butter and aquafaba for royal icing.
