  • ¾ cup (180ml) pure maple syrup (Grade A Amber preferred)
  • 2 tablespoons (30ml) bourbon (e.g., Buffalo Trace)
  • 4 tablespoons (57g) unsalted butter, melted
  • ½ cup packed (100g) brown sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 9-inch (23cm) pie crust, homemade or store-bought
  • Optional: 1 tablespoon (15ml) heavy cream
  • Optional: chopped toasted pecans for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and place a rack in the middle position.
  2. Toast the pecans in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant and lightly browned. Remove from heat and let cool.
  3. Prepare the pie crust by fitting it into a 9-inch pie dish. Trim excess dough and crimp edges. Chill for 10-15 minutes if possible.
  4. In a large bowl, whisk together the eggs, brown sugar, and salt until smooth.
  5. Slowly whisk in the melted butter, maple syrup, bourbon, and vanilla extract until the mixture is glossy and pourable.
  6. Fold in the toasted pecans, reserving some for topping if desired.
  7. Pour the filling into the prepared crust and scatter reserved pecans on top.
  8. Bake for 50-60 minutes until edges are set and golden brown, and the center jiggles slightly when shaken. Tent crust edges with foil halfway through if browning too fast.
  9. Cool the pie on a wire rack for at least 2 hours before slicing to allow the filling to set.

Notes

Use room temperature eggs to avoid curdling. Toast pecans carefully to avoid burning. Cover crust edges with foil after 30 minutes to prevent over-browning. Cool pie completely before slicing for clean cuts. For gluten-free, use almond flour crust; for dairy-free, substitute butter with coconut oil or vegan butter. Reduce or omit bourbon for lower alcohol content.
