  • 2 cups (300g) huckleberries, fresh or frozen
  • 3/4 cup (150g) granulated sugar
  • 2 tablespoons (30ml) freshly squeezed lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 2 tablespoons (30ml) water

Instructions

  1. Measure 2 cups (300g) of huckleberries, rinse gently under cold water, and drain well. If using frozen, thaw completely and drain excess juice.
  2. In a medium non-reactive saucepan, add the berries and 2 tablespoons (30ml) of water. Cook over medium heat, stirring occasionally, until the berries start to break down and release juice, about 5-7 minutes.
  3. Stir in 3/4 cup (150g) granulated sugar, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon ground cardamom. Mix well to combine.
  4. Increase heat to medium-high and bring the mixture to a rolling boil. Stir frequently to prevent sticking or burning, about 3-5 minutes.
  5. Stir in 2 tablespoons (30ml) freshly squeezed lemon juice.
  6. Continue boiling gently for 8-10 minutes, stirring often. Test for doneness by placing a small spoonful on a chilled plate; if it wrinkles when pushed with a finger after a minute, the jam is set. If not, cook a bit longer.
  7. Remove from heat and let the jam cool for 5 minutes in the pot.
  8. Spoon the jam carefully into clean, sterilized jars, leaving a little headspace. Wipe rims and seal tightly.
  9. Let jars cool to room temperature before refrigerating. The jam will thicken further as it cools.

Notes

Use fresh lemon juice for best acidity and setting. Stir constantly near the end to prevent scorching. Test jam readiness with the wrinkle test on a chilled plate. For seed-free jam, strain through a fine-mesh strainer after cooking. You can add 1 teaspoon powdered pectin for thicker jam or use honey/maple syrup as alternative sweeteners with adjusted quantities. Slow cooker method: cook on low for 3-4 hours, stirring occasionally.
