Creamy, naturally sweet overnight oats made with simple pantry ingredients. Perfect for busy mornings—just mix, refrigerate, and wake up to a delicious grab-and-go breakfast.

  • 1/2 cup (45 g) rolled oats (old-fashioned oats)
  • 1 medium ripe banana (mashed)
  • 2 tablespoons (32 g) peanut butter (creamy or crunchy)
  • 1/2 cup (120 ml) milk (dairy or plant-based)
  • Optional: 1 tablespoon chia seeds
  • Optional: 1 teaspoon maple syrup or honey
  • Pinch of salt (for serving)

Instructions

  1. In a mason jar or airtight container, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. Add the peanut butter. If it’s cold, microwave for 10 seconds to soften, then stir to combine with the banana.
  3. Pour in the milk and stir until the peanut butter is evenly distributed.
  4. Add the rolled oats and mix until fully coated. The mixture will look loose—that’s okay.
  5. If using, stir in chia seeds and/or maple syrup or honey.
  6. Seal the container and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, or granola. Serve cold or microwave for 30-45 seconds if desired.

Notes

Mash the banana thoroughly for even sweetness. Use room-temperature peanut butter for easier mixing. The oat-to-liquid ratio is 1:1 (oats to milk) plus the moisture from the banana. For best texture, use rolled oats, not instant or steel-cut. Oats keep in the fridge for up to 5 days; flavors deepen over time. To freeze, store in individual jars for up to 3 months; thaw overnight in the refrigerator.
