  • 1 pound (450g) large shrimp, peeled and deveined (fresh or thawed frozen shrimp)
  • 8 ounces (225g) fettuccine or linguine pasta
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • ½ cup (120ml) dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 1 cup (240ml) heavy cream (or half-and-half for lighter version)
  • ¾ cup (75g) freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes, lemon zest or juice

Instructions

  1. Bring a large pot of salted water to a boil. Cook 8 ounces of fettuccine or linguine according to package instructions until al dente, about 9-11 minutes. Reserve ½ cup pasta water before draining.
  2. While pasta cooks, heat 2 tablespoons butter in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook about 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Lower heat to medium. Add remaining 2 tablespoons butter to skillet. Once melted, add minced garlic and stir constantly for about 1 minute until fragrant but not browned.
  4. Pour in ½ cup dry white wine and scrape up browned bits from pan. Let simmer and reduce by half, about 2-3 minutes.
  5. Slowly stir in 1 cup heavy cream. Bring to a gentle simmer, then gradually add ¾ cup grated Parmesan cheese, stirring until melted and sauce thickens slightly, about 3-4 minutes. Add reserved pasta water a tablespoon at a time if sauce is too thick.
  6. Return cooked shrimp to skillet and stir to coat in sauce. Add drained pasta and toss gently to combine. Heat for 1-2 minutes to marry flavors. Adjust seasoning with salt, pepper, and optional red pepper flakes or lemon zest.
  7. Serve immediately, garnished with fresh parsley and extra Parmesan if desired.

Notes

Do not overcook shrimp; they will finish cooking in the sauce. Reserve pasta water to adjust sauce consistency. Cook sauce over medium heat and stir gently to prevent breaking. Use freshly grated Parmesan for best sauce texture.
