A quick and easy weeknight pasta that tastes like restaurant-quality comfort food. Buttery garlic sauce coats tender shrimp and al dente pasta, all ready in just 15 minutes.

Ingredients

Scale
  • 8 ounces (225g) pasta (linguine or spaghetti)
  • 1 pound (450g) large or jumbo shrimp, peeled and deveined
  • 4 tablespoons (55g) unsalted butter (cold)
  • 6 cloves garlic, minced
  • 1/4 cup (60ml) dry white wine (Pinot Grigio or Sauvignon Blanc)
  • 1 large lemon (zest and juice)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/2 cup (120ml) reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1/2 cup pasta water before draining. Do not rinse.
  2. While pasta cooks, pat shrimp dry with paper towels. Season generously with salt and pepper.
  3. Heat a large skillet over medium-high heat. Add 2 tablespoons butter. Once melted and sizzling, add shrimp in a single layer. Cook 1-2 minutes per side until pink and cooked through. Transfer to a plate.
  4. Reduce heat to medium. Add remaining 2 tablespoons butter to the skillet. Once melted, add minced garlic and red pepper flakes. Cook 30 seconds, stirring constantly, until fragrant.
  5. Pour in white wine (or broth). Scrape up browned bits from pan. Simmer 1-2 minutes until reduced by half.
  6. Add drained pasta to the skillet. Toss with garlic butter sauce. Add reserved pasta water a little at a time, tossing until sauce coats pasta evenly.
  7. Return shrimp to skillet. Add lemon zest, lemon juice, and chopped parsley. Toss 30 seconds until shrimp are warmed through.
  8. Taste and adjust seasoning. Serve immediately, garnished with extra parsley and red pepper flakes if desired.

Notes

Pat shrimp dry for best sear. Use cold butter to prevent garlic from burning. Reserve more pasta water than needed. Don’t skip lemon zest. Work in batches if skillet is crowded. Taste as you go.
