A fast and easy elderberry syrup made in the Instant Pot with ginger and raw honey, perfect for boosting immunity and soothing cold symptoms.

Ingredients

Scale
  • 1 cup (120g) dried elderberries
  • 2-inch piece fresh ginger root, peeled and sliced
  • ½ to ¾ cup (120–180ml) raw honey
  • 4 cups (950ml) water
  • 1 cinnamon stick (optional)
  • 3 whole cloves (optional)

Instructions

  1. Peel and slice the fresh ginger into thin rounds. Measure out the dried elderberries and water. If using cinnamon stick and cloves, have them ready.
  2. Pour 4 cups (950ml) of water into the Instant Pot. Add 1 cup (120g) dried elderberries, sliced ginger, cinnamon stick, and cloves.
  3. Seal the lid and set the Instant Pot to “Manual” or “Pressure Cook” on high for 10 minutes.
  4. Allow the pressure to release naturally for about 10-15 minutes after cooking.
  5. Using a fine mesh strainer or cheesecloth, strain the liquid into a heat-safe bowl or pitcher. Press gently on the solids to extract as much syrup as possible without squeezing too hard.
  6. While the syrup is still warm (not hot), stir in ½ to ¾ cup (120-180ml) raw honey until fully dissolved. Taste and adjust sweetness if needed.
  7. Let the syrup cool to room temperature before transferring it to your storage jar or bottle. Seal tightly and refrigerate.

Notes

Add raw honey only after the syrup has cooled to preserve its beneficial enzymes. Press gently when straining to avoid bitterness. Store syrup in a sealed glass container in the refrigerator for up to three weeks. If syrup thickens too much, stir in a little warm water before use.
