A quick and easy recipe for tangy pickled cherry tomatoes with fresh basil and balsamic vinegar, perfect as a snack or side dish that adds a bright, flavorful punch to any meal.

  • 1 pint (450g) cherry tomatoes, preferably firm and ripe
  • 10 fresh basil leaves, torn or whole
  • 1/2 cup (120ml) balsamic vinegar
  • 1/4 cup (60ml) white wine vinegar
  • 1/4 cup (60ml) water
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 2 garlic cloves, thinly sliced
  • 1 teaspoon whole black peppercorns
  • Pinch of red pepper flakes (optional)

Instructions

  1. Rinse 1 pint (450g) of cherry tomatoes and pat dry. Leave them whole or prick each tomato with a fork for faster flavor penetration. (About 5 minutes)
  2. In a medium saucepan, combine 1/2 cup balsamic vinegar, 1/4 cup white wine vinegar, 1/4 cup water, 2 tablespoons sugar, and 1 teaspoon salt. Heat over medium until sugar and salt dissolve, about 5 minutes, avoiding a vigorous boil.
  3. Remove from heat and stir in 2 thinly sliced garlic cloves, 1 teaspoon whole black peppercorns, and a pinch of red pepper flakes if using. Let cool slightly for about 3 minutes.
  4. Place cherry tomatoes and torn basil leaves into a clean pint-sized jar or glass container. Pour warm pickling liquid over tomatoes, ensuring they are fully submerged. Press down gently to remove air bubbles.
  5. Seal the jar tightly and let sit at room temperature for 30 minutes to start pickling. Then refrigerate. Tomatoes develop more flavor over time but are good after this short wait.
  6. Enjoy after at least 2 hours chilling in the fridge. Store leftovers refrigerated for up to 1 week.

Notes

Use firm cherry tomatoes to avoid mushy texture. Let pickling liquid cool slightly before pouring to keep tomatoes fresh. Adjust sugar and vinegar to taste. For softer tomatoes, pickle for 24 hours. Store refrigerated up to 1 week. Can add jalapeño or other herbs for variations.
