Refreshing Copycat Starbucks Strawberry Açaí Refresher Recipe

A homemade version of the Starbucks Strawberry Açaí Refresher that is quick, easy, and refreshing with real strawberries, hibiscus tea, and a hint of passion fruit syrup.

  • 3 tablespoons dried hibiscus flowers (food-grade, e.g., roselle)
  • 4 cups (1 liter) water, for brewing hibiscus tea
  • 1/4 cup freeze-dried strawberries
  • 1/2 cup fresh strawberries, diced
  • 2 tablespoons passion fruit syrup
  • 1/2 cup (120 ml) white grape juice
  • 1 to 1.5 cups (8 to 12 fl oz) chilled sparkling water
  • Juice of half a lime
  • Ice cubes, as needed

Instructions

  1. In a medium saucepan, bring 4 cups (1 liter) of water to a boil. Remove from heat, add 3 tablespoons of dried hibiscus flowers, and steep for 10 minutes until the water turns deep ruby red.
  2. Strain the tea through a fine mesh sieve into a large pitcher, pressing lightly on the flowers to extract flavor. Discard the solids. Let the tea cool completely (about 20–30 minutes) or refrigerate to speed cooling.
  3. While the tea cools, combine 1/4 cup freeze-dried strawberries and 1/2 cup diced fresh strawberries in a small bowl.
  4. Once the hibiscus tea is cool, stir in 2 tablespoons passion fruit syrup, 1/2 cup (120 ml) white grape juice, and the juice of half a lime. Mix well and adjust sweetness or lime juice to taste.
  5. Fill serving glasses with ice cubes. Spoon about 2 tablespoons of the strawberry mixture into each glass.
  6. Pour the hibiscus-strawberry tea mixture over the ice until the glass is about two-thirds full.
  7. Top off each glass with 1/4 to 1/2 cup (2 to 4 fl oz) of chilled sparkling water. Stir gently to combine without losing fizz.
  8. Garnish with a lime wedge or a few whole fresh strawberries if desired. Serve immediately.

Notes

Use fresh lime juice for best flavor. Chill hibiscus tea and sparkling water before assembling to maintain fizz. Adjust steeping time of hibiscus tea to control tartness (10-12 minutes recommended). If passion fruit syrup is unavailable, substitute with passion fruit juice and honey or simple syrup. Store hibiscus tea base refrigerated up to 3 days; add fresh strawberries and sparkling water just before serving.
