Refreshing Peach Bellini Popsicles

A simple and sophisticated adult-only frozen treat combining ripe peaches with sparkling wine for a refreshing summer dessert.

  • 4 large ripe peaches, peeled and sliced
  • 1 cup (240 ml) dry sparkling wine (Prosecco recommended)
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons honey or simple syrup (maple syrup as vegan option)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Peel and slice peaches by blanching in boiling water for 30 seconds, then plunging into ice water. Slice into roughly 1-inch pieces.
  2. Place sliced peaches, lemon juice, honey or syrup, vanilla extract (if using), and a pinch of salt into a blender or food processor. Blend until smooth and silky.
  3. Pour the peach puree into a bowl and refrigerate for 15-20 minutes to chill.
  4. Gently fold the sparkling wine into the chilled peach puree, stirring slowly to preserve bubbles.
  5. Pour the mixture evenly into prepared popsicle molds, leaving room at the top for expansion. Insert sticks.
  6. Freeze for at least 6 hours or overnight until solid. Four hours may suffice but texture will be less firm.
  7. To unmold, dip molds briefly in warm water for 10-20 seconds and serve immediately.

Notes

Chill the peach puree before folding in sparkling wine to preserve bubbles. Use dry prosecco for best flavor balance. Let popsicles rest a few minutes at room temperature before serving for easier eating. Avoid vigorous stirring to keep fizz.
