Refreshing Watermelon Mint Frosé Cocktail

A bright, juicy watermelon and mint frozen rosé cocktail that’s perfectly chilled and thirst-quenching, ideal for summer afternoons and gatherings.

Ingredients

  • 4 cups fresh watermelon, cubed
  • 1 bottle (750 ml) dry or semi-dry rosé wine
  • 1012 fresh mint leaves, gently bruised
  • 2 tablespoons fresh lemon juice
  • 1/4 cup simple syrup (homemade or store-bought)
  • 2 cups ice cubes
  • Optional: mint sprigs for garnish
  • Optional: watermelon balls or wedges for garnish

Instructions

  1. Cut about 4 cups of seedless watermelon into chunks and chill beforehand for extra cold cocktail.
  2. Place watermelon chunks in a blender and pulse until smooth but slightly textured. Pour into a freezer-safe container and freeze for about 1 hour until partially frozen.
  3. If making homemade simple syrup, combine equal parts sugar and water in a saucepan, heat gently until sugar dissolves, then cool.
  4. Add the partially frozen watermelon purée back to the blender with rosé wine, lemon juice, simple syrup, mint leaves, and ice cubes. Blend on high until smooth and frothy.
  5. Taste and adjust sweetness or texture by adding more simple syrup, lemon juice, rosé, or ice as needed.
  6. Pour into chilled glasses and garnish with mint sprigs and watermelon wedges or balls. Serve immediately.

Notes

Freeze the watermelon purée first to achieve a silky texture without icy chunks. Gently bruise mint leaves to release flavor without bitterness. Adjust sweetness after blending for best balance. Serve immediately for freshest flavor and texture. For a lower-alcohol version, freeze half the rosé into ice cubes to use instead of plain ice.
