Refreshing Watermelon Mint Mojito Popsicles

A simple, fresh, and cheeky summer treat that tastes like a mojito frozen in a popsicle. Perfect for hot days, backyard barbecues, or a refreshing snack anytime.

Ingredients

  • 4 cups (600g) seedless watermelon, cubed and chilled
  • 1012 fresh mint leaves, washed and roughly chopped
  • 3 tablespoons (45ml) fresh lime juice (from 2 medium limes)
  • 2 tablespoons (30ml) honey or agave syrup, adjust to taste
  • 2 tablespoons (30ml) white rum (optional)
  • ½ cup (120ml) cold water
  • Pinch of salt

Instructions

  1. Cube the watermelon into chunks, removing any seeds if needed. Rinse the mint leaves and roughly chop to release their oils.
  2. In a blender, combine the watermelon chunks, chopped mint leaves, fresh lime juice, honey or agave syrup, cold water, and a pinch of salt. Add white rum if using.
  3. Blend on high until smooth and vibrant green flecks from the mint are visible.
  4. Optional: Pour the puree through a fine mesh strainer into a bowl to remove excess pulp and mint bits for a silky texture.
  5. Pour the watermelon mint mojito mixture evenly into popsicle molds, leaving a small gap at the top for expansion during freezing.
  6. Insert popsicle sticks, cover, and freeze for at least 4 hours or overnight until firm.
  7. To unmold, run the popsicle molds under warm water for 10-15 seconds, then gently pull the popsicles out. Serve immediately.

Notes

If watermelon isn’t in season, substitute with cantaloupe or honeydew. For a stronger mint flavor, muddle mint leaves before blending but avoid bitterness by blending fresh. Adjust sweetness based on watermelon ripeness. Rum lowers freezing point, so keep to 2 tablespoons or less for best texture. Let popsicles sit a few minutes at room temperature before serving for easier eating.
