  • 1/4 cup (85 g) natural honey
  • 1/4 cup (60 ml) low-sodium soy sauce
  • 4 cloves fresh garlic, minced
  • 2 tablespoons (30 ml) rice vinegar
  • 1/2 cup (120 ml) low-sodium chicken broth
  • 1 tablespoon (15 ml) toasted sesame oil
  • Freshly ground black pepper, to taste
  • 2 cups (370 g) uncooked jasmine rice, rinsed
  • Thinly sliced green onions (optional, for garnish)

Instructions

  1. In a medium bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, chicken broth, toasted sesame oil, and freshly ground black pepper.
  2. Pat dry the chicken thighs with paper towels and place them skin-side up in the crockpot in a single layer.
  3. Pour the honey garlic sauce over the chicken thighs, coating each piece but keeping the skin mostly exposed.
  4. Cover and cook on low for 4 to 5 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. While the chicken cooks, rinse the jasmine rice under cold water until clear. In a medium saucepan, combine rinsed rice and 3 cups (720 ml) water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 10 minutes, then fluff with a fork.
  6. For a thicker glaze, remove chicken thighs and transfer the cooking liquid to a small saucepan. Simmer on medium-high for 5 minutes until slightly reduced. Spoon the thickened sauce over the chicken.
  7. Serve the chicken thighs over the jasmine rice and garnish with sliced green onions if desired.

Notes

Patting the chicken dry before cooking helps the sauce cling better and prevents watery texture. Avoid overcrowding the crockpot to keep the skin glazed and not soggy. For a thicker sauce, reduce it on the stove after cooking rather than thickening in the crockpot. Check chicken temperature around 4 hours if your crockpot runs hot to avoid overcooking. Cooking rice separately ensures fluffy texture.
