  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ⅓ cup (67g) granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set aside.
  3. In another large bowl, beat the softened butter and 1 ½ cups granulated sugar with a hand or stand mixer on medium speed until fluffy and pale, about 2 to 3 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract, scraping down the sides as needed.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  6. In a small bowl, mix ⅓ cup granulated sugar with 2 tablespoons ground cinnamon for the coating.
  7. Using a medium cookie scoop (about 1.5 tablespoons), scoop dough balls and roll each generously in the cinnamon sugar mixture until fully coated.
  8. Place the coated dough balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 8 to 10 minutes, until edges are set and just starting to turn golden but centers still look soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not skip the cream of tartar for authentic tang and chewy texture. Use room temperature butter and eggs for best results. Chill dough for 30 minutes if cookies spread too much. Pull cookies from oven when centers look slightly underbaked to keep them soft. Rolling dough balls generously in cinnamon sugar creates the classic crackly crust.
