  • 3 cups boiling water (1 cup per gelatin packet)
  • 3 cups cold sparkling water (1 cup per gelatin packet)
  • Fresh berries (blueberries, raspberries, sliced strawberries) for layering
  • Optional: 1 teaspoon honey or agave syrup per gelatin mixture for sweetness
  • Optional: ½ cup cold milk or coconut milk for creamy white layer
  • Mini plastic cups or silicone molds for setting jello shots

Instructions

  1. Boil 1 cup of water. Pour over one packet of flavored gelatin (e.g., strawberry red) in a medium bowl. Stir well until completely dissolved (about 2 minutes). Add 1 cup of cold sparkling water and mix gently to keep the fizz. Optionally stir in 1 teaspoon of honey.
  2. Pour this mixture into mini cups or silicone molds, filling each about one-third full. Add a few fresh berries on top gently. Chill in the refrigerator for 30-40 minutes, or until firm but still slightly tacky.
  3. Dissolve one packet of unflavored gelatin in 1 cup boiling water. For a creamy white layer, stir in ½ cup cold milk or coconut milk after dissolving. Then add 1 cup sparkling water. Pour gently over the set red layer, filling about one-third full. Chill for another 30-40 minutes.
  4. Repeat step one with the blue gelatin flavor. Pour over the white layer, add a few more berries if desired, and chill for at least 2 hours until fully set.
  5. Once fully chilled, remove the jello shots from molds or serve directly in cups. They should jiggle delightfully and sparkle under the light.

Notes

Pour each gelatin layer slowly over the back of a spoon to avoid mixing colors. Chill each layer until tacky but not fully firm before adding the next to maintain distinct layers. Use fresh fruit sparingly to avoid diluting gelatin. Keep sparkling water cold and stir gently to preserve fizz. Jello shots keep well covered in the fridge for up to 3 days. Optional edible glitter or star-shaped sprinkles add a festive touch.
