  • 1/2 cup (60g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 4 oz (half a block) cream cheese, softened
  • 2 tablespoons (28g) unsalted butter, softened
  • 1 cup (120g) powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk (as needed)
  • 2430 candy eyes (or mini chocolate chips)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a medium microwave-safe bowl, melt 1/2 cup butter in 30-second bursts until just melted. Let cool for 1-2 minutes.
  3. Whisk 1 cup granulated sugar into melted butter until combined. Add 2 eggs and 1 teaspoon vanilla; whisk vigorously for about 1 minute until slightly thicker and glossy.
  4. In a separate bowl, sift or whisk together 1/3 cup cocoa powder, 1/2 cup flour, 1/4 teaspoon salt, and 1/4 teaspoon baking powder. Fold into wet mixture with a rubber spatula until just combined.
  5. Pour batter into prepared pan and spread evenly. Bake for 20-25 minutes, until edges are set and center is slightly jiggly. A toothpick inserted should have moist crumbs, not clean.
  6. Cool brownies in pan for 10 minutes, then lift out using parchment and transfer to a wire rack to cool completely (at least 1 hour).
  7. For frosting: Beat 4 oz softened cream cheese and 2 tablespoons softened butter with an electric mixer until smooth and fluffy, about 2 minutes.
  8. Add 1 cup sifted powdered sugar and 1/2 teaspoon vanilla; beat on low until incorporated, then on medium for 1 minute. Add 1 tablespoon milk if too thick; add more powdered sugar if too thin.
  9. Cut cooled brownies into 12-16 rectangles. Transfer frosting to a piping bag or zip-top bag with a small corner snipped off.
  10. Pipe horizontal lines across each brownie, leaving small gaps for eyes. Pipe some lines diagonally or crisscross for an authentic mummy look.
  11. Press two candy eyes into the gaps while frosting is still soft.
  12. Let frosted brownies sit for 10-15 minutes to firm up before serving.

Notes

Don’t overbake the brownies; they should be slightly underbaked for a fudgy texture. Cool completely before frosting to prevent the frosting from sliding off. Use room temperature cream cheese and butter for smooth frosting. The messy frosting lines are part of the charm—don’t worry about perfection. Brownies can be baked a day ahead and frosted the day of serving.
