  • 1/4 cup honey (85g)
  • 1/4 cup Dijon mustard (60g)
  • 2 tablespoons whole grain mustard (30g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • Optional: fresh herbs like thyme or rosemary (a few sprigs)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, garlic powder, paprika, salt, and pepper until smooth and well combined.
  3. Pat the chicken breasts dry with paper towels.
  4. Coat the chicken breasts evenly with the honey mustard mixture. Let sit for 10 minutes if time allows.
  5. Arrange the chicken breasts in a single layer in a baking dish. Pour any remaining marinade over the top.
  6. Bake uncovered for 20-25 minutes or until the internal temperature reaches 165°F (74°C). Check at 18 minutes to avoid drying out.
  7. Optional: Broil for the last 2 minutes to caramelize the glaze, watching carefully to prevent burning.
  8. Remove from oven and let the chicken rest for 5 minutes before slicing.
