Ingredients

  • Aged Gouda (150g/5 oz)
  • Emmental or Swiss Cheese (150g/5 oz)

  • Beer-Infused Cheddar (optional, 100g/3.5 oz)
  • Soft Pretzels (4-6 medium pretzels)
  • Pretzel Sticks or Mini Pretzels (1 cup)
  • Pumpernickel or Rye Bread (4-6 slices)
  • Breadsticks or Grissini (handful)
  • Cornichons or Baby Pickles (1 cup)
  • Pickled Red Onions (½ cup)
  • Pickled Carrots or Cauliflower (½ cup)

  • Apple Slices (1 apple, thinly sliced)
  • Dried Apricots or Figs (½ cup)

Instructions

  1. Prepare Your Meats (5 minutes): Slice smoked bratwurst or knockwurst into ½-inch thick rounds. Optionally pan-sear in a dry skillet over medium-high heat for 2 minutes per side until browned. Let cool. Slice German salami and Thuringer into thin rounds (about ¼-inch thick). Fold prosciutto or speck into loose ribbons or small piles.
  2. Prepare Your Cheeses (5 minutes): Take cheeses out of refrigerator 30 minutes before serving. Cut aged gouda into ½-inch cubes or thin wedges. Slice Emmental into thin triangles (about ⅛-inch thick). Leave brie whole or cut into wedges. If using beer-infused cheddar, slice into thin rectangles. Arrange each cheese type in separate clusters on the board.
  3. Prepare Your Breads and Pretzels (3 minutes): Cut soft pretzels into bite-sized pieces (about 2-inch chunks). Arrange pretzel sticks or mini pretzels in a small pile or ramekin. Cut pumpernickel or rye bread into small triangles or use a cookie cutter for shapes. Place breadsticks standing up in a small ramekin.
  4. Prepare Your Accompaniments (2 minutes): Drain cornichons and pat dry. Spoon pickled red onions and pickled carrots into separate small ramekins. Spoon whole-grain mustard and beer mustard into individual ramekins.
  5. Prepare Your Fruits and Nuts (3 minutes): Wash and dry green grapes, leaving in small clusters. Slice apple thinly (about ⅛-inch thick) and toss with 1 tablespoon lemon juice to prevent browning. Arrange dried apricots or figs in a small pile. Toast nuts in a dry skillet over medium heat for 3-4 minutes until fragrant; let cool.
  6. Arrange Your Board (7 minutes): Place ramekins of mustards, pickles, and spreads on the board first as anchor points. Add cheese clusters in different areas. Add meat piles around cheeses. Fill gaps with breads and pretzels, then fruits and nuts. Tuck fresh rosemary sprigs around the board. Leave about 20% empty space for a balanced look.
