  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract
  • Pinch of sea salt flakes for sprinkling on top
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. Brown the butter in a light-colored saucepan over medium heat, stirring frequently until it melts, foams, and turns golden brown with a nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  3. In a medium mixing bowl, mash the ripe bananas with a fork until smooth but still a bit chunky.
  4. Add the granulated sugar and cooled brown butter to the mashed bananas and stir gently to combine.
  5. Stir in the vanilla extract until incorporated.
  6. Sprinkle the all-purpose flour, baking soda, and salt over the banana mixture. Fold gently with a spatula just until combined, avoiding overmixing.
  7. If desired, fold in chopped walnuts or chocolate chips.
  8. Spoon the batter into the prepared loaf pan and smooth the top.
  9. Lightly sprinkle a pinch of flaky sea salt over the top.
  10. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out with a few moist crumbs but no raw batter.
  11. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Use a light-colored pan to brown butter to better monitor color and avoid burning. Use very ripe bananas for best sweetness and moisture. Fold dry ingredients gently to avoid tough bread.
