  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 3 tablespoons (60ml) honey
  • 4 cloves garlic, minced
  • 3 tablespoons (42g) unsalted butter
  • 2 medium firm apples (Honeycrisp, Fuji, or Granny Smith), cored and sliced into 1/2-inch wedges
  • 1/2 cup (120ml) low-sodium chicken broth
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 tablespoon (15ml) olive oil
  • Salt and black pepper to taste
  • 23 sprigs fresh thyme or rosemary (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper. Core the apples and slice into 1/2-inch thick wedges. Mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken thighs smooth side down. Cook undisturbed for 5-6 minutes until golden brown. Flip and cook for another 4-5 minutes until cooked through (165°F/74°C). Transfer chicken to a plate and tent with foil.
  3. Reduce heat to medium. Add 1 tablespoon of butter to the skillet. Once melted and foaming, add apple wedges in a single layer. Cook for 2-3 minutes per side until golden and slightly softened. Transfer apples to the plate with chicken.
  4. Reduce heat to medium-low. Add remaining 2 tablespoons of butter. Once melted, add minced garlic and cook for 30 seconds, stirring constantly. Pour in chicken broth, honey, and apple cider vinegar. Stir, scraping up browned bits. Simmer for 2-3 minutes until slightly thickened and glossy.
  5. Return chicken and apples to the skillet, nestling into the sauce. Add fresh herb sprigs if using. Spoon sauce over everything and simmer for 2-3 minutes to meld flavors.
  6. Remove from heat and let rest for 5 minutes. Discard herb sprigs before serving.

Notes

Pat chicken dry for best browning. Use a meat thermometer to avoid overcooking. For chicken breasts, cut into thinner cutlets and reduce cooking time. If sauce is too thin, simmer longer; if too thick, add a splash of broth.
